Tasted this for the first time. My favorite Aloo was cooked for me by a man from Assam in Nepal. Kitindo's Aloo is very different and also very good. The spices are warm and earthy.
For a vegetarian curry, this packed a punch. The veggies weren’t overcooked, and the sauce was addictive.
The creamy coconut base had layers of flavor — lemongrass, ginger, and just a hint of heat. Fantastic.
